This course is intended to be taken after the Introduction To HACCP course, and is accredited by the International HACCP Alliance. It builds upon the standard HACCP approach, with particular focus on the principles of Validation and Verification. The course includes discussion of approaches to risk assessment of hazards, and how to verify that your systems are functioning properly and are achieving their desired outcomes, and a segment discussing internal audits in the context of a food manufacturing operation.
The principles covered in this course will aid food companies in better complying with the FDA’s verification requirements in the Food Safety Modernization Act (FSMA), as well as similar USDA requirements. Global Food Safety Initiative (GFSI) audit standards also require that programs within the Food Safety Management System be both validated and verified by competent individuals with an understanding of these concepts.

This course is accredited by the International HACCP Alliance and meets the requirements of Advanced HACCP: Verification and Validation of HACCP Systems.
Completion of 2-Day Introduction to HACCP course and some implementation experience, or equivalent experience with HACCP program implementation and knowledge of the 12 steps of HACCP.
