This two day introductory course accredited by the International HACCP Alliance focuses on understanding and implementing HACCP principles.  Topics include: prerequisite programs for food safety, current GMPs (Good Manufacturing Practices), HACCP principles, FSMA (Food Safety Modernization Act) preventive controls, discussion on current market issues and recent regulatory updates. Participants will take part in interactive activities and gain practical knowledge on how to identify and prevent food safety hazards; establish control measures; limits and monitoring procedures; write and update a HACCP plan; document, verify results, and prepare audits.
